Turkey Hints

Steps to prepare a turkey  (easier than you think)
  1. Place your thawed or fresh turkey on  flat rack in a pan.  Keep the breast up.
  2. Brush or rub the skin with oil (and seasoned salt to taste).  This keeps the turkey skin from drying out and helps to get the golden brown look.
  3. Place turkey into a preheated 325 oven ( not wrapped)
  4. When turkey has cooked about 2/3 of the time, put foil over as a tent to keep from over browning the skin.
  5. Using your thermometer, check about a 1/2 hour before the chart suggests.  165 degrees.  (deeply pierce thigh -  should have clear liquid. thickest part of  breast.  center of stuffing )
